Abstract: Vegetables accumulate nitrate residues easier than other crops. Thus, studying the factors affecting the accumulation in vegetables and possible control measures has been the focus for research scientists. This paper gives the current status on the study summarizing the internal factors, such as species, variety and accumulation site,as well as,the external factors, such as,fertilization, illumination, moisture and harvest stage. These factors affect the absorption and dynamic change of nitrate in the vegetables.Control measures, such as,by improving the agronomic practices, regulating environmental conditions and breeding new vegetable varieties,in order to reduce the nitrate pollution are presented.
